Tasty Tuesday

It's a nice day today, so I went on my walk. Yesterday I ran a couple of short races with DD- She's a fast runner!

This week I am not very inspired for cooking....

The meal plan for this week:
  • Mon- Tilapia, potatoes, green peas
  • Tues- Pasta with Tomato sauce and spinach
  • Wed- Chicken Nuggets I use a recipe similar to this, except I make my own Italian Bread Crumbs and use melted coconut oil!
  • Thurs-To inlaws
  • Fri- Pizza
  • Sat-Lentil Dal (All about Vegetarian Cooking pg 85) Ramen Noodles
  • Sun-Spicy Black Bean Chili (Fresh from the Vegetarian Slow Cooker  pg 65) I forgot to start this Sunday morning so instead we had Macaroni and Cheese, canned salmon, peas, carrot sticks
Last Year's Meal Plan:
  • Mon- Tilapia
  • Tues- Black Bean Quesadillas
  • Wed- Pasta with Tuna, Capers, Anchovies
  • Thurs- Curried Potatoes (Vegetarian Family Cookbook pg 180)
  • Fri- Leftovers
  • Sat- To Inlaws
  • Sun- Pizza
