So, I missed my walk yesterday and Friday. But I rode my bike with DS to the PO on Friday and yesterday I did some Sun Salutations. I guess that's better than nothing! Today my walk was 16 min. including the time to check the box which was empty because our mail doesn't get put out till about 10:00.
This Week's Meal Plan:
- Mon- Frozen Homemade Vegetable Lasagna with steamed spinach
- Tues- Sesame-Crusted Trout with Orange Quinoa Salad (House & Home Magazine Sep 2011-I couldn't find recipe online, I have the page from magazine), leftover Easter sides
- Wed- Enchilada-Inspired Polenta Pie (Fresh from the Vegetarian Slow Cooker pg128) (Last week this got bumped b/c we had leftovers one night, so I moved it to this week.)
- Thurs-Chickpea Falafels
- Fri- Pizza (Dough All about Vegetarian Cooking pg 46)
- Sat- Frozen Fish Sticks with Buns
- Sun-
PastaWe went out to Boston Pizza!
- Mon- Mac and Cheese
- Tues- Trout (with rub), rice and corn
- Wed- Chili with cornbread
- Thurs- BBQ tofu, green beans, cauliflower
- Fri- Pizza
- Sat- Black Bean Sofrito (Vegetarian Family Cookbook pg 188)
- Sun- Cheese Grits, sweet potato, green salad, croissants, Cheesecake (Easter)
