I've fallen into a meal-fixin' rut. I don't know what to make. I used to be so good and have healthy snacks and meals and now that the kids are older and have their own opinions and tastes it seems pointless to keep making lentils and kale and cauliflower when they don't like them.
Anyway, I keep trying (sometimes). Here's what we ate last week.
- Thurs- Cauliflower with cheese sauce, Samosas
- Fri- Pizza with Pillsbury Pizza Dough (good dough) topped with Anchovies & Greens, Salad
- Sat- Roast Jerk Chicken (plain for kids), Sweet Potatoes, Frozen Spinach
- Sun- Dinner at In-laws- Turkey, Stuffing, Potatoes, Turnips, Cheesy Cauliflower, Sweet Potatoes
- Mon- BlackEyed Pea Fritters in Pitas with lettuce and tomatoes and Tahini Sauce
- Tues- Fish Tacos from Old El Paso Kit (good) with Cod, Purple Cabbage & Carrot Slaw with sauce mix.
- Wed- Penne Pasta with Zuchinni & Basil (World Vegetarian Cookbook pg 482) Salad
