So, I made it on my walk this morning after Toast, even though it's so cold out there! BBRRRR!!
This week's meal plan is/was as follows:
- Mon-Salmon, Ramen noodles with peas and carrots, Egg rolls
- Tues- Canned Chicken Noodle Soup with extra carrots and onion, cheese bread toast
- Wed- Tilapia, Potatoes, Veg
- Thurs- Curried Quinoa and Chickpeas
- Fri-
PizzaPork Chop for HH, Leftovers for me (Kids gone to NS) - Sat- Leftovers (Kids gone)
- Sun-
Roast ChickenLobster at In-laws
Last year's meals:
- Mon- Ramen
- Tues- Pasta with Pesto and Beans
- Wed-Chicken Nuggets, Potatoes
- Thurs- Haystacks
- Fri- Pita, Broccoli Soup (see recipe below)
- Sat- Frittata, Coleslaw
- Sun- Leftovers- Mac & Cheese, Frittata, Soup
Broccoli Soup:
Saute in O.O. 1 chopped onion & 1 chopped carrot. Add 2 c. chopped potatoes, 1 head chopped broccoli, 1/2 head chopped cauliflower, 2 c. veg. stock, S&P, cumin. Cover with water if needed. Simmer 20 min. Puree.
