Tasty Wednesday

The summer is going by fast!  We had a busy week with DD spending 2 nights at the inlaws and then DS spending 2 nights there!  It was nice to finally have everybody home last night.  I've been working on a few projects which I'll share tomorrow.

Here is the meal plan for this week:
  • Mon-Tilapia in Tomato Fennel Sauce (Leslie Beck's Healthy Kitchen pg 238) Quinoa, Roasted Broccoli
  • Tues- Haystacks with slow cooker dried pintos
  • Wed- Out (Kenny's)
  • Thurs- Salmon, Potatoes
  • Fri- Pizza with Anchovies Dinner at inlaws-lasagna, seafood linquini
  • Sat-BBQ Hamburgers (had those for lunch) Mac&Cheese
  • Sun- Frozen Chicken Patties (DS gone to camp) Takeout from Dino's
Last year's meal plan
  • Mon- Eggs- Oil, 1 onion, 1 red pepper 7-9 minutes; Jalepeno, 2 cloves garlic 1 min; 8 roma tomatoes, 1/2 t cumin, S&P, Cover, cook 2 min; 1T tomato paste; low heat; make 4 holes, break eggs in, cover, cook 8-10 min.
  • Tues-Haystacks
  • Wed-Haddock
  • Thurs- Pasta, chickpeas, broccoli- Blanch Broccoli, cook chickpeas in oil til pop; 1/3 c. currants 4 cloves garlic 1/4 t red pepper flakes, broccoli; add cooked pasta 1/3 c pistachios
  • Fri- Pizza
  • Sat- Salmon
  • Sun- ? (DS to camp)
