Foody Friday

Whew, another week has gone by.  It's been a busy one!

Here's what we've eaten this past week.
  • Fri- Dominoes pizza that K brought home (I was at work.)
  • Sat- Leftovers
  • Sun- Crispy Baked Chicken Breasts, Fries, Beets
  • Mon- Salmon Melt on toast fixed by K (I was at a meeting)
  • Tues- Mac and Cheese fixed by K (I was at work)
  • Wed- Refried Beans Burritos, Cheese Quesadillas
  • Thurs- Carrot, Onion Frittatas (N was gone to Pokemon and out to eat after)
I missed a lot of meals this week.  Next week shouldn't be so busy.  It's like when K was taking his MBA classes and had to miss 2 dinners a week, every other week.  Now it's my turn to miss some dinners.  I'm glad though, that we still sit down and eat together, whoever's here!

Foody Friday

Hi again!

Here's what we ate last week.
  • Fri- Canned Lemon Tuna and Canned Red Pepper Tuna with Grated carrot, Grated Beet, Chopped Radish, Chopped Celery, Chopped Broccoli (C gone)
  • Sat- Carrot Ginger Lentil Soup- made on stove, not in slowcooker.
  • Sun- Dinner at in-laws- Turkey, dressing, potatoes, gravy, sweet potatoes, green beans, corn, jello salad, Banana/Orange pudding for dessert
  • Mon- Leftovers
  • Tues- Grilled Cheese, Tomato Soup
  • Wed- Spaghetti Pie, Sauteed Kale and Garlic
  • Thurs- Fish Tacos (from Old El Paso Kit), Slaw made with Kale Super Blend
So, that's what we've been eating.  I went shopping yesterday (I don't have to tutor on Thursdays anymore so I can shop then), but I didn't have a menu plan for the week!  I may switch back to posting our meals on Thursdays.  We'll see what I come up with to cook for this week!

Easter

Hi!

We had a nice long weekend, last weekend with Easter and all.  We dyed eggs on Saturday.


The Easter Bunny had to hide the eggs inside, since there's still so much snow outside!

We had poached eggs for brunch.  We don't eat the dyed Easter Eggs. 

For supper, we went to Summerside to eat at the in-laws.  We had turkey, dressing, sweet potatoes, potatoes, green beans, corn, jello salad and a banana/orange pudding for dessert!  It was quite the spread!

The front room progress has stalled.  It's seeming like too much work... I have to figure out how I'm gonna do the ceiling.  I want to use the beaded board we had on the kids' shared room's ceiling. This means I don't have to mud the ceiling too nicely since it'll be covered. But it's the angled ceiling that's causing me concern.

  I think we need to treat the angled part as the ceiling, like in the kitchen, and put bead board all the way down,. I guess I'll have to force myself to get more mudding done this weekend! ;-)

Front Room Progress

Hi!

Thursday night we all went to see the Harlem Globetrotters in Summerside at the Credit Union Place!

K and I thought it was a once-in-a-lifetime thing, so of course we should go!  Turns out they'e been here about 3 or 4 years in a row!  It was fun anyway!  They played the Washington Generals and won in an overtime sudden death play by 1 point! ;-)

Since I'm done with tutoring, I now have Tuesday (during the day- I still have to work at the library from 5:30-8:30) and Thursday to do things around the house.  Yay!  We are finally making some progress on the front room again.

Tuesday I hung the double doors for the coat closet.
This involved moving out the mitre saw and measuring and cutting a lot of 2x4's.  I also had to rip some 3/8 inch plywood to use for the side of the doors.  Ripping is my least favorite thing to do for some reason, but with our rechargeable Skill saw it's easier, so I was able to get it done!

I'm eager to get to work on our locker/cabinets on the other side, so yesterday (Fri), I worked on finishing up the little bits of drywall that were still left to do. If you look above, I did the drywall above the double doors.  I did above the front door and two narrow pieces around it.

Here, I had to do a tiny piece in the corner.

More tiny pieces over the door to the hallway, to the right of the door and to the right of our glass blocks (from the Dr. Pepper plant in Dallas!) 

Here's the angled wall which was already cut and put up, but still needs to be trimmed. I did to the left of the double doors and had a leftover piece which should just fit to the right of the angled wall when we finish up the studs that need to go behind it. 

Now, I have to finish screwing in the drywall and then the taping and mudding will begin.  N had a good idea yesterday for the benches in front of the lockers. I had planned on having them built in, but he suggested that they be able to slide under the lockers.  Then we have the option to push them in if  we want, but can also have them out!  Great idea! So, that's our new plan.

Tasty Saturday

Hi!

It's April already!  Yesterday was a day off for everybody which was nice and makes today feel like Sunday instead of Saturday.

Here's what we ate last week.
  • Fri- Frozen Pizza by K
  • Sat- Scrambled Egg Wraps with Roasted Red peppers, salsa, cheese, red onions, avocada
  • Sun-  Roasted Chicken Thighs, Fruit, Crudites
  • Mon- Black Bean Tortilla Soup- Black Beans cooked with stock, served over tortilla chips, with salsa, cheese
  • Tues- Homemade chicken nuggets, Mashed Potatoes, Raw Carrots
  • Wed- Frozen Cheese Tortellinis, Frozen Slow Cooker Tomato Sauce
  • Thurs- Tacos- Beef for N & K, Beans for me (C was gone)
We had a lot of mexican this week!  C is doing a nutrition assignment for school and she's keeping track of the different food groups she's eating.  We noticed she's (we're) missing fruits and veggies so she's been having more fruits at breakfast and for snacks along with veggies.

Monday, Monday

Hi!

We had a nice weekend.  On Saturday, K and N went to Charlottetown for a Raspberry Pi Jam.  They had a nice time.

Saturday night we watched a movie, PeeWee's Big Adventure. When it was about 1/2 way over, we decided to have some popcorn, so I got up to fix it.  When I went to the kitchen, I looked out the window and saw a raccoon walking along the fence!
See it on top of the fence, by the post? Hopefully, it's just passing thru!

The weather was nice on Sunday and the conditions were finally good for sledding down the hill to the pond.

The kids had their last swimming lessons on Sunday.  It turns out that both lessons were cancelled last weekend.  It was nice because both of them passed their levels.  N will move up to level 6 and C to level 4!

I started walking today.  I wore my snowboots and it was fine.  I slipped once on the way home crossing the bridge, but then I made sure to pay more attention and walk more purposefully!  When I got home and turned on the local morning show, they said it was National Take a Walk Day!

Foody Friday

Hi!

What a funny week!  The kids were off school thru Wednesday, but then the roads still weren't cleared enough so we had to drive the kids to and from school on Thurs. and today (Fri).  

N's Science Fair was this week.  He did a project on Electromagnets.

At work, I copied a sign that was re-tweeted from @EPLdotCA (Edmonton Public Library) by @PEILibrary

When I was home for lunch yesterday, Paris came peeking in the kitchen window.  The snow has shrunk and the cats don't fall thru it as much, so they're getting out a bit more. 

Here's what we've eaten this week.
  • Fri- Frozen Pizza
  • Sat- Leftovers
  • Sun- Chili, CornBread. I used butter instead of shortening and I used my Paderno skillet because my cast iron one doesn't fit into the little toaster oven with its handle!
  • Mon- Poached Fish with Veggies (frozen oriental veggies), Rice, Egg Rolls, Ultimate Chocolate Cake. I made 1/2 the cake recipe for just 1- 9" pan. C and I sprinkled powdered sugar on top.
  • Tues- Perogies, Hamburger, Raw Carrots
  • Wed- K picked up pizza in town when he took C to dance
  • Thurs- Frozen Vegetable Lasagna
It's been 2 years since I started posting our menus!  Wow, that's a lot of (boring) meals!
